Coconut Date Energy Bars:
Lately I've been seeing lots of power bar recipes around and I thought to myself that I should play around with some of the ingredients I recently purchased at the farmer's markets I went to. I thought the combination of dates, almonds, and coconut would be a nice combination to satisfy any sweet tooth. So I tried it out and they turned out really good. I even got a "hey, this is pretty good" from my dad who is pretty tough to please when it comes to eating healthy food. So here's the recipe for my power bars.
Ingredients:
- 1 ½ cup chopped dates
- 1 cup raw almonds
- ½ cup shredded unsweetened coconut
- 1 tsp. cinnamon *
- 1 tsp. vanilla

If you're in the mood for something delicious on a chilly day try out this veggie-filled sandwich. It has a lot of fresh ingredients, and after you toast it all the flavors just melt together for the perfect flavor combination.

Fresh Spring Salad:
Today's lunch was all about utilizing the last of my groceries before I go back to the central coast for spring break, and after a sun filled day walking around the farmer's market I was in the mood for something light and refreshing. So I whipped up a quick small salad with some fresh and juicy watermelon. I love watermelon because of its high water content, it fills you up quick without all the calories (and not to mention it is delicious). Anyways, in the salad pictured below, I kept it super simple. I used what I had available in my fridge and pantry: spring mix lettuce, watermelon, olive oil, balsamic vinegar, and a hint of sea salt. The combination of the vinegar coated lettuce with sweet and crisp watermelon was really satisfying.

Step 1: Put however much lettuce you are hungry for in a bowl
Step 2: Mix oil and vinegar in small cup, then toss it with your lettuce. **
Step 3: After lettuce is evenly coated, toss in your watermelon.
Step 4: Sprinkle with sea salt if you would like and enjoy!
**I ended up using only half the amount of dressing I prepared, measurements may vary depending on how much lettuce you use.
Add Ins: Feta Cheese, slivered almonds, cucumbers, be creative!
